My #1 kitchen essential is coconut! 🥥 Why?

Not only because it tastes amazing - but also because it is an incredible healer for both Pitta and Vata imbalances.
Ayurveda actually calls the coconut tree “the tree of life”, because every part of it serves humanity: The fruit, the water, the oil, even the leaves - all have value!
But today, I want to share why I’m personally obsessed with using coconut in my kitchen, protocols and rituals, especially in the warmer months.
The best summer food ever?
Summer is the season of Pitta dosha (hot, intense, fiery). It’s easy to get overheated, inflamed, irritated, or burned out, both physically and emotionally.
Coconut comes in as a natural antidote: it cools, calms, hydrates, and nourishes.
What many people don’t realize is that Vata loves coconut too. While it's famous for Pitta pacification, coconut is also grounding and lubricating - two qualities Vata desperately needs, especially if your mind is racing or your body feels dry and depleted. Beyond the doshas, personally, I just love how it makes me feel: clearer, softer, nourished and more steady.
Coconut water
It hydrates on a deep level with its natural electrolytes, helping to reduce internal heat and acidity. My favourite way to consume it is to sip on coconut water with fresh lime juice and a sprinkle of sea saltto hydrate and reduce acidity.
NOTE: Don't have it ice-cold not to kill your digestive fire!
Coconut oil
It is incredible both for frying (high smoking point) and as a topical application - cooling the skin, calming the nerves, and reducing inflammation.
Coconut milk
Offers soft nourishment that soothes fiery digestion. Use it as a base for a creamy mung dal or summer veggie stew. Its sweet, heavy, and cooling quality balances both Vata and Pitta beautifully.
Coconut flakes
You can sprinkle them toasted over your morning rice porridge or mix into bliss balls for a grounding snack. But also... I love to serve my sweet potato with them (learnt in Sri Lanka):
Coconut flour
Try swapping a few tablespoons into pancakes or cookie batter. It’s light, fibrous, and supports smooth digestion without spiking blood sugar.
